Pig slaughter in Mexico

In a rural town located in the state of Tlaxcala and when the day arrived, some of the members of a family have arranged to meet in order to carry out one of the killings that take place everyweek in the backyard of their house. Divided in three sheds with no light and of scant hygiene, about 30 pigs are breeded and exploited with commercial purposes.

According to the Farming, Cattle Raising, Rural Development, Fishing and Food Secretary (Sagarpa) of the Mexican Executive Power, in 2014 more than 17 million pigs were killed to feed the mexican population.

In one of the sheds two sows exploited and inseminated with reproductive purposes spend some months a year inmobilized inside the maternity cages with an iron skeleton that does not let them turn their body. In the contiguous sheds the pigs are separated according to their age. There and for approximately nine months they will live shut up and will be fattened up until they die. A time that has been calculated to make the most profit as possible.

The men are in charge of the killing and the quartering and the women of the elaboration of the cold meet, of the different dishes and of serving the drinks.

Two sows in maternity cages. The sows, after being subjeted to forced gestation, are inmobilised on these frames of iron, days before the delivery. The objetive of these cages is to avoid the squashing of the slucking pigs and also to prevent the sows from twirling around or moving in order to have a natural contact with her babies.

One of the sows exploited for reproductive purposes and inmobilised in the maternity cage tries to lay down. The babies awaiting next to her will be separated forcibly weeks later and fattened for the slaughtering. The mothers hear and smell her babies located in the adjacent sheds, but they will never see them again.

It is six o'clock in the morning and all the participants have arrived. Three men get into the last shed and cover the head of the chosen pig to make his handling easy. Once he is blinded they drag him to the sacrifice zone by grabbing him by his ears and tail.

The pig puts up resistance and screams. The men kick him. One of them inmobilizes him with a metal device hooked in his snout while another plunges a knife several times in his carotid artery. They themselves admit that they do not always get it right and that on occasions his agony can last for minutes.

The owner of the house considers that the deaths by suffocation that the sows cause to their baby pigs in the maternity cages are deliberate as the sheds are in front of the killing zone and they observe it everyweek. She said that they are aware conscious.
